Buckeye Bundt Cake

I am not sure but I think it is a law if you are from Columbus, OH, yo have to love Buckeyes. Well, I am not much of a football fan and the nuts from the Buckeye tree are poisonous ( so don't eat them.) However, all of those wonderful peanut butter and chocolate desserts... those are right up my alley.


I came across this recipe from Tip Hero a couple of years back and even if you aren't from Columbus, you'll love it!!


You will need


PEANUT BUTTER FILLING

– ¾ cup creamy peanut butter – 4 ounces cream cheese – ¼ cup powdered (icing or confectioners’) sugar, sifted – 1 egg, beaten – 3 tablespoons whole milk


CAKE

– 1 cup water – 6 ounces unsalted butter + 1 tablespoon for greasing the pan – ⅓ cup cocoa powder +2 tablespoons for dusting the pan – 1 heaping tablespoon instant espresso powder – 1 teaspoon kosher salt – 2 cups all-purpose flour – 1 ½ cups granulated sugar – 1 teaspoon baking soda – 2 eggs – 1 teaspoon vanilla extract – ½ cup sour cream Shiny Peanut Butter Chocolate Glaze – ½ cup heavy cream – 1 tablespoon granulated sugar – 2 tablespoons corn syrup – ¼ cup creamy peanut butter – 4 ounces dark chocolate, finely chopped
